Alison wrote, “My carnivorous husband said this was one of the top five dishes I’ve ever made. I served it with some cilantro lime rice and it made an amazing meal with plenty of leftovers. This’ll be on repeat in our house!”
Vanessa said, “Loved this recipe! I actually used roasted red pepper hummus since thanks to Costco I had a big container of it! Haha. I used red lentil penne. Only used mushrooms and kale since that’s all I had. Lemon juice definitely completes it! Thank you!!”
Maddie wrote, “Oh my gosh I made this last night, it was fantastic!! I’m trying to transition to a more plant-based way of eating, but have such a hard time getting my boyfriend on board. He loved it too though!!!”
Roxanne said, “My sister found this recipe when I was visiting her. We made it up and it was so delicious! My 5-year-old nephew is a very picky eater and he loved it. It was also very economical. It fed three adults and a child for two nights with a nice baguette. I liked it so much I made it again as soon as I got home.”
Brittany said, “We love this dish! Added the same spices to some chicken and cooked it for my boyfriend. Served with some cilantro lime cauliflower rice and just regular guacamole instead of crema this time. It was even better for lunch the next day!!”
Athina said, “I made this tonight! The BF thought I was insane for putting the potatoes in the crock, but low and behold, they came out great! 3 pots took 3 hours and the big boy took 4. I realized I forgot an ingredient – the tomato sauce, but the show went on and the recipe was still delish. Love the sauce. I am so obsessed with all of the cashew sauce recipes now that I was brave enough to try them – can’t get enough!”
Kristi said, “These were AMAZING!! I don’t eat a lot of meat and my husband is a big meat eater. He loves trying new veg recipes with me and we made these tonight. We both loved them. He loved them so much he wants to make these instead of real meat every time we make tacos! So good and easy!!”
Cindy said, “Saw the recipe today, picked up cauliflower at the grocery store, and made it for my dinner tonight! Had some extra cooked carrots so tossed those in, too. I would especially encourage serve over black or red rice for a nice color contrast. YUM!”
Kris said, “These were outstanding. They stayed together fairly well which was a plus, although I did bake them an extra 10 min. I used white beans, half pumpkin half sesame seeds (I ran out of pumpkin), and black bean sauce instead of worsch and it was great.”
Beth said, “I have lost track of how many times I have made this recipe. It is so delicious. And I am no longer vegan! I am preparing this today for two vegan friends coming over for dinner tonight. This is my go-to lasagna recipe!”
Michelle said, “This recipe is amaaaazing! I mean they all are buuuut I used chia seeds, black beans, cashews, pecans and made Ezekiel bread crumbs because sometimes ya just gotta work with what you have. Served over homemade pasta and vegan spinach pesto… yum!”
Kelsy said, “Made this for dinner last night and am currently sitting at my desk eating leftovers for lunch… I think it might actually get even better the next day! So, so good! And to make it even quicker, I used a frozen bag of mixed stir fry veggies. This will definitely become a regular in my rotation!!”
Shane said, “I can honestly say that this recipe was one of the best tasting meals I think I’ve ever had. My daughter’s dairy allergy introduced me to the new world of vegan eating and this is by far the best home cooked meal I have tried to date. I’ll be using Hummusapien’s recipes a lot more in the future, that’s for sure. All clean plates after this dinner!”
Steph said, “Just wanted to drop a quick thank you! My 7yo daughter said “no” to meat about 4 months ago. Needless to say, it’s been an adventure finding nutritious plant-based meals that my VERY picky girl will actually eat. We tried these last night and she LOVED them! The adult folks (seriously anti- ‘fu) were also pleasantly surprised. Thanks so much!”
